If my kids bring lunch from home, they insist on having homemade bread. This is my go-to recipe. My son says he even eats the crust! I usually bake on Sunday and it is still good through about Wednesday.
Ingredients
1 1/2 Tbl. instant yeast
2 c. warm water
1/3 c. honey
2 Tbl softened butter
3 - 4 c. whole wheat flour
1/2 cup Rolled oats
1 1/2 tsp. salt
Directions
Combine
yeast, water, butter and honey in the bowl of a stand mixer; let sit for 5
minutes or until frothy and bubbly.
Add 1 1/2 cups of flour, rolled oats and salt and mix until combined.
Add remaining flour, 1/2 cup
at a time, until you get a soft dough. The dough should barely pull
away from the sides of the bowl and it will still be a little sticky.
Using the dough hook, knead for 4 minutes on low, cover and let rise
until doubled.
Punch down dough and
put in a loaf pan greased with butter. Let rise again until doubled.
Bake at 350
degrees for 40 minutes. Remove from oven.
Cool in pan for 10 minutes,
then remove loaf and cool completely.
